
Curau is a typical dessert of Brazilian cuisine, especially popular during the June festivals.
Traditional Green Corn Curau

minutesMade from corn, milk and sugar, curau has a creamy texture and a slightly sweet flavor. It can be served hot or cold, usually sprinkled with cinnamon powder.
Ingredients
6 ears of green corn
4 cups (tea) of whole milk (1 liter)
1 ½ cup (tea) of sugar
1 pinch of salt
Cinnamon powder for sprinkling
Directions
- Remove the kernels from the cobs with a knife, cutting them close to the cob.
- In a blender, beat the corn kernels with the milk until you obtain a homogeneous mixture.
- Strain the mixture through a fine sieve or clean cotton cloth, squeezing well to extract all the liquid.
- In a pan, place the strained liquid, sugar and pinch of salt.
- Cook over medium heat, stirring constantly with a wooden spoon or whisk to avoid lumps.
- Continue stirring until the cream thickens and begins to pull away from the bottom of the pan (about 20-25 minutes).
- Transfer the curau to a baking dish or individual bowls.
- Sprinkle cinnamon powder on top.
