Curau is a typical dessert of Brazilian cuisine, especially popular during the June festivals.

Made from corn, milk and sugar, curau has a creamy texture and a slightly sweet flavor. It can be served hot or cold, usually sprinkled with cinnamon powder.

Ingredients

  • 6 ears of green corn

  • 4 cups (tea) of whole milk (1 liter)

  • 1 ½ cup (tea) of sugar

  • 1 pinch of salt

  • Cinnamon powder for sprinkling

Directions

  • Remove the kernels from the cobs with a knife, cutting them close to the cob.
  • In a blender, beat the corn kernels with the milk until you obtain a homogeneous mixture.
  • Strain the mixture through a fine sieve or clean cotton cloth, squeezing well to extract all the liquid.
  • In a pan, place the strained liquid, sugar and pinch of salt.
  • Cook over medium heat, stirring constantly with a wooden spoon or whisk to avoid lumps.
  • Continue stirring until the cream thickens and begins to pull away from the bottom of the pan (about 20-25 minutes).
  • Transfer the curau to a baking dish or individual bowls.
  • Sprinkle cinnamon powder on top.
