Ingredients
1 medium cauliflower
2 tablespoons of butter
2 tablespoons of wheat flour
2 cups of milk
1 cup of grated cheese (can be cheddar, mozzarella, or any other cheese of your choice)
Salt and pepper to taste
Nutmeg to taste (optional)
Grated parmesan for sprinkling (optional)
Chopped sauce to decorate (optional)
Directions
- Preheat the oven to 180°C.
- Wash the cauliflower and cut it into florets. Cook the florets in boiling salted water for about 5 minutes, or until they are slightly soft. Drain and reserve.
- In a pan, melt the butter over medium heat. Add the wheat flour and stir well to form a roux (a mixture of butter and flour). Cook for a few minutes, stirring constantly.
- Gradually add the milk to the roux mixture, whisking constantly to prevent lumps from forming. Cook until you get a creamy sauce.
- Add half the grated cheese to the white sauce and stir until the cheese melts completely. Season with salt, pepper and nutmeg to taste.
- Arrange the cauliflower florets in a baking dish and pour the sauce over them, covering evenly.
- Sprinkle the remaining grated cheese over the cauliflower and, if desired, add a thin layer of grated Parmesan.
- Bake in the preheated oven for about 20 to 25 minutes, or until the cauliflower au gratin is golden and bubbly.
- Remove from the oven and garnish with chopped parsley, if desired.
