Ingredients

  • 1 medium cauliflower

  • 2 tablespoons of butter

  • 2 tablespoons of wheat flour

  • 2 cups of milk

  • 1 cup of grated cheese (can be cheddar, mozzarella, or any other cheese of your choice)

  • Salt and pepper to taste

  • Nutmeg to taste (optional)

  • Grated parmesan for sprinkling (optional)

  • Chopped sauce to decorate (optional)

Directions

  • Preheat the oven to 180°C.
  • Wash the cauliflower and cut it into florets. Cook the florets in boiling salted water for about 5 minutes, or until they are slightly soft. Drain and reserve.
  • In a pan, melt the butter over medium heat. Add the wheat flour and stir well to form a roux (a mixture of butter and flour). Cook for a few minutes, stirring constantly.
  • Gradually add the milk to the roux mixture, whisking constantly to prevent lumps from forming. Cook until you get a creamy sauce.
  • Add half the grated cheese to the white sauce and stir until the cheese melts completely. Season with salt, pepper and nutmeg to taste.
  • Arrange the cauliflower florets in a baking dish and pour the sauce over them, covering evenly.
  • Sprinkle the remaining grated cheese over the cauliflower and, if desired, add a thin layer of grated Parmesan.
  • Bake in the preheated oven for about 20 to 25 minutes, or until the cauliflower au gratin is golden and bubbly.
  • Remove from the oven and garnish with chopped parsley, if desired.
