Make Water Kefir with the ingredients below and following the instructions.
Ingredients
2-3 tablespoons of water kefir grains
1/4 cup brown sugar or cane sugar (avoid using artificial sweeteners)
1 liter of filtered water
Dried fruits (optional, for flavor)
Organic lemon peel (optional, for flavor)
Directions
- In a glass jar, dissolve the brown sugar in a liter of filtered water.Â
Make sure the sugar is well mixed. - Place the water kefir grains into the sugar solution in the pitcher.Â
Do not use metal utensils as they may harm the grains. - Cover the jar with a cotton cloth or filter paper and secure with an elastic band.
- Leave the jar in a dark place at room temperature between 18°C ​​and 25°C to ferment for 24 to 48 hours.
- If desired, after the initial fermentation, you can add dried fruit or organic lemon peel to the pitcher to flavor the water kefir.Â
This will also add nutrients to the grains. - After fermentation, strain the liquid from the grains using a plastic or nylon strainer.Â
Make sure not to use metal. - Kefir grains are reusable.
- Place them in a new sugar solution to start another batch right away, or store them in the refrigerator with some water and sugar for later use.
- Transfer the strained liquid to an airtight bottle.Â
You can refrigerate it to slow down the fermentation. - If desired, after straining, you can carry out a second fermentation by adding fresh fruit or fruit juice to the sealed bottle.Â
This will create a carbonated drink.Â
Leave the bottle at room temperature for 12-24 hours, then refrigerate before consuming.
