Ingredients

  • 1 kg of ripe tomatoes

  • 1 large chopped onion

  • 2 minced garlic cloves

  • 1 tablespoon olive oil

  • 1 teaspoon of sugar

  • 2 cups vegetable broth or water

  • 1/2 teaspoon of salt

  • Black pepper to taste

  • 1/4 cup sour cream (optional)

Directions

  • Wash and remove the seeds from the tomatoes. 
    Cut into pieces and book.
  • In a large pan, heat the oil over medium heat. 
    Add onion and garlic and sauté until soft and translucent.
  • Add the chopped tomatoes, sugar, vegetable broth (or water), salt and black pepper. 
    Stir well and cook over low heat for about 30 minutes, or until the tomatoes are very tender.
  • Remove the soup from the heat and let it cool slightly. 
    Then use a mixer or blender to blend the soup until smooth.
  • Return the soup to the pot and heat over low heat. 
    If you prefer a creamier soup, add the cream and stir well.
  • Serve the soup hot, accompanied by fresh bread or croutons.
