Ingredients
4 large potatoes
2 tablespoons olive oil
Salt and pepper to taste
1 cup grated cheddar cheese
1/2 cup cooked and shredded bacon
1/2 cup of cream
2 tablespoons chopped chives
1/2 cup corn (optional)
1/2 cup chopped red pepper (optional)
1/2 cup chopped mushrooms (optional)
Directions
- Preheat the oven to 200°C.
- Wash the potatoes well and dry them with a paper towel.
Poke holes in the surface of each potato with a fork.
This helps cook the potatoes evenly and prevents them from exploding in the oven. - Rub the potatoes with olive oil and season them with salt and pepper to taste.
- Place the potatoes directly on the oven rack or on a baking sheet and bake for about 45 minutes to 1 hour, or until they are tender inside and the skin is crispy.
- Cooking time may vary depending on the size of the potatoes and the power of your oven.
- While the potatoes are roasting, prepare the filling.
In a bowl, combine the cheddar cheese, cooked and shredded bacon, sour cream, chives and any other ingredients of your choice, such as corn, peppers or mushrooms. - Season with salt and pepper to taste.
- When the potatoes are ready, remove them from the oven and make a longitudinal cut in the top of each one, forming an opening.
- Carefully use a fork to mash the inside of the potato a little.
- Place a generous portion of the filling inside each potato.
- Return the stuffed potatoes to the oven for a few more minutes, just to heat the filling and melt the cheese.
- Remove the potatoes from the oven, garnish with more chopped chives, if desired, and serve hot.
