Ingredients

  • 4 large potatoes

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • 1 cup grated cheddar cheese

  • 1/2 cup cooked and shredded bacon

  • 1/2 cup of cream

  • 2 tablespoons chopped chives

  • 1/2 cup corn (optional)

  • 1/2 cup chopped red pepper (optional)

  • 1/2 cup chopped mushrooms (optional)

Directions

  • Preheat the oven to 200°C.
  • Wash the potatoes well and dry them with a paper towel. 
    Poke holes in the surface of each potato with a fork. 
    This helps cook the potatoes evenly and prevents them from exploding in the oven.
  • Rub the potatoes with olive oil and season them with salt and pepper to taste.
  • Place the potatoes directly on the oven rack or on a baking sheet and bake for about 45 minutes to 1 hour, or until they are tender inside and the skin is crispy.
  • Cooking time may vary depending on the size of the potatoes and the power of your oven.
  • While the potatoes are roasting, prepare the filling. 
    In a bowl, combine the cheddar cheese, cooked and shredded bacon, sour cream, chives and any other ingredients of your choice, such as corn, peppers or mushrooms.
  • Season with salt and pepper to taste.
  • When the potatoes are ready, remove them from the oven and make a longitudinal cut in the top of each one, forming an opening.
  • Carefully use a fork to mash the inside of the potato a little.
  • Place a generous portion of the filling inside each potato.
  • Return the stuffed potatoes to the oven for a few more minutes, just to heat the filling and melt the cheese.
  • Remove the potatoes from the oven, garnish with more chopped chives, if desired, and serve hot.
