Ingredients

  • 1 tray of shimeji (about 200g)

  • 2 tablespoons sesame oil (or cooking oil)

  • 2 cloves of garlic, chopped

  • 2 tablespoons soy sauce

  • Salt to taste

  • Chopped chives for garnish (optional)

Directions

  • Clean the shimeji by separating the mushrooms individually.
  • Cut the base of the shimeji, removing the hard part.
  • Heat the sesame oil in a frying pan or wok over medium heat.
  • Add the chopped garlic to the hot oil and stir until it turns golden.
  • Add the shimeji mushrooms to the pan and stir well so they absorb the flavor of the garlic and oil.
  • Pour the soy sauce over the shimeji and continue stirring.
  • Taste and adjust the flavor with salt if necessary. 
    Remember that soy sauce is already salty, so add salt with caution.
  • Cook for a few more minutes until the shimeji is cooked but still firm.
  • Avoid overcooking to maintain the crispy texture.
  • Serve the shimeji hot, sprinkled with chopped chives, if desired.
