Ingredients
2 cups of cooked rice
1 can of drained green corn
1 can of drained peas
1 grated carrot
1 chopped onion
2 cloves of garlic, chopped
1/2 cup chopped parsley and chives
1/2 cup grated cheese (optional)
3 boiled and chopped eggs (optional)
Salt and pepper to taste
2 tablespoons olive oil
Directions
- Preheat the oven to 180°C.
- In a frying pan, heat the olive oil and sauté the onion and garlic until golden.
- In a large bowl, mix the cooked rice, corn, peas, grated carrot, sautéed onion and garlic, parsley and chives.
Shake well. - Season with salt and pepper to taste.
Add grated cheese if desired. - Transfer the mixture to a greased refractory shape.
- Distribute the chopped boiled eggs over the mixture.
- Bake for approximately 20-25 minutes, or until the top is golden.
- Remove from the oven and let it rest for a few minutes before serving.
