Ingredients

  • 2 cups of cooked rice

  • 1 can of drained green corn

  • 1 can of drained peas

  • 1 grated carrot

  • 1 chopped onion

  • 2 cloves of garlic, chopped

  • 1/2 cup chopped parsley and chives

  • 1/2 cup grated cheese (optional)

  • 3 boiled and chopped eggs (optional)

  • Salt and pepper to taste

  • 2 tablespoons olive oil

Directions

  • Preheat the oven to 180°C.
  • In a frying pan, heat the olive oil and sauté the onion and garlic until golden.
  • In a large bowl, mix the cooked rice, corn, peas, grated carrot, sautéed onion and garlic, parsley and chives. 
    Shake well.
  • Season with salt and pepper to taste. 
    Add grated cheese if desired.
  • Transfer the mixture to a greased refractory shape.
  • Distribute the chopped boiled eggs over the mixture.
  • Bake for approximately 20-25 minutes, or until the top is golden.
  • Remove from the oven and let it rest for a few minutes before serving.
