Follow the step-by-step preparation instructions and use the ingredients you want to make your Greek Rice.

Ingredients

  • 2 cups of white rice

  • 4 cups of water

  • 2 tablespoons of vegetable oil

  • 1 small onion, chopped

  • 2 garlic cloves, chopped

  • 1 small carrot, cut into small cubes

  • 1 red pepper, cut into small cubes

  • 1 green pepper, cut into small cubes

  • 1/2 cup fresh or frozen peas

  • 1/2 cup green corn (optional)

  • Salt to taste

  • Black pepper to taste

  • 1 teaspoon saffron (optional, for color)

  • 1/2 cup raisins (optional)

  • Chopped parsley for garnish (optional)

Directions

  • Start by washing the rice well under running water until the water runs clear. 
    This helps remove excess starch.
  • In a large pan, heat the oil over medium heat. 
    Add chopped onion and garlic and sauté until golden and fragrant.
  • Add the carrots, peppers, peas and corn (if using) to the pan. 
    Saute for a few minutes until the vegetables start to soften.
  • Add the rice to the pan and stir so that it is well mixed with the vegetables and fry for about 2 minutes.
  • Add the hot water to the pan. 
    If you are using saffron, add it now to color the rice. 
    Season with salt and pepper to taste.
  • Bring to a boil, reduce the heat to medium-low, cover the pan and cook for about 15-20 minutes, or until the rice is tender and has absorbed all the water.
  • If you are using raisins, you can add them now and gently mix them into the rice. 
    Cover the pan again and let it rest for another 5 minutes, with the heat off.
  • Finally, stir the Greek rice with a fork to loosen the grains and mix the vegetables well. 
    Garnish with chopped parsley, if desired, and serve hot as a side dish or main dish.
