Ingredients
2 cups of white rice
4 cups of water
2 tablespoons of vegetable oil
1 small onion, chopped
2 garlic cloves, chopped
1 small carrot, cut into small cubes
1 red pepper, cut into small cubes
1 green pepper, cut into small cubes
1/2 cup fresh or frozen peas
1/2 cup green corn (optional)
Salt to taste
Black pepper to taste
1 teaspoon saffron (optional, for color)
1/2 cup raisins (optional)
Chopped parsley for garnish (optional)
Directions
- Start by washing the rice well under running water until the water runs clear.
This helps remove excess starch. - In a large pan, heat the oil over medium heat.
Add chopped onion and garlic and sauté until golden and fragrant. - Add the carrots, peppers, peas and corn (if using) to the pan.
Saute for a few minutes until the vegetables start to soften. - Add the rice to the pan and stir so that it is well mixed with the vegetables and fry for about 2 minutes.
- Add the hot water to the pan.
If you are using saffron, add it now to color the rice.
Season with salt and pepper to taste. - Bring to a boil, reduce the heat to medium-low, cover the pan and cook for about 15-20 minutes, or until the rice is tender and has absorbed all the water.
- If you are using raisins, you can add them now and gently mix them into the rice.
Cover the pan again and let it rest for another 5 minutes, with the heat off. - Finally, stir the Greek rice with a fork to loosen the grains and mix the vegetables well.
Garnish with chopped parsley, if desired, and serve hot as a side dish or main dish.
