Make your Pesto Sauce using the ingredients below and following the step-by-step preparation instructions.

Ingredients

  • 2 cups fresh basil leaves, washed and dried

  • 1/2 cup grated parmesan cheese

  • 1/3 cup pine nuts (or walnuts)

  • 3 garlic cloves, peeled

  • 1/2 cup extra virgin olive oil

  • Salt to taste

  • Black pepper to taste

Directions

  • Wash the basil leaves well and dry them carefully.
  • Grate the parmesan cheese.
  • Peel the garlic cloves.
  • In a food processor, place the basil, parmesan cheese, pine nuts and garlic cloves.
  • Pulse for a few seconds until the ingredients are well mixed and form a thick paste.
  • With the processor running, slowly add the olive oil until the mixture is smooth.
  • Stop to scrape the sides of the processor if necessary.
  • Add salt and black pepper to taste. 
    Remember that Parmesan cheese is already salty, so add salt sparingly.
  • Transfer the pesto sauce to an airtight container. 
    If not using immediately, cover the surface of the sauce with a thin layer of olive oil to prevent the basil from browning.
