Ingredients
2 medium oranges (organic if possible)
3 eggs
1 cup of sugar
1/2 cup vegetable oil (such as canola or sunflower oil)
2 cups of wheat flour
1 tablespoon baking powder
Directions
- Wash the oranges well and brush the peel to remove any dirt or debris.
- Trim the ends of the oranges and cut them into small pieces.
Remove the seeds, but leave the skin on.
Place the orange pieces in the blender and blend until you obtain a thick puree.
Reserve. - Preheat the oven to 180°C (350°F).
Grease and flour a cake pan. - In a bowl, beat the eggs and sugar until light and fluffy.
- Add the vegetable oil to the egg and sugar mixture, and mix well.
- Then add the reserved orange puree to the liquid mixture and mix until incorporated.
- Gradually add the sifted wheat flour to the mixture and mix gently until there are no more lumps of flour.
- Lastly, add the baking powder and mix gently until completely incorporated into the dough.
- Pour the batter into the prepared pan and level the surface.
- Place in the preheated oven and bake for approximately 35-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Remove the cake from the oven and let it cool in the pan for a few minutes before unmolding.
- Once the cake has cooled completely, you can sprinkle powdered sugar over the top if desired.
- Cut the cake into slices and serve!
