Ingredients
1 and 1/2 cups Moroccan couscous
1 and 1/2 cups of water or vegetable broth
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon cumin powder
1/2 teaspoon paprika
1/4 teaspoon black pepper
1/2 cup raisins
1/2 cup sliced and toasted almonds
1/2 cup cooked chickpeas
1/4 cup chopped fresh parsley
1/4 cup chopped fresh mint
1 lemon juice
Directions
- Boil water or vegetable broth in a pan.
Add salt and 1 tablespoon of olive oil. - In a large bowl, place the Moroccan couscous.
Pour the boiling water over the couscous, covering it completely. - Cover the bowl with a clean cloth and let the couscous absorb the liquid for about 5-10 minutes.
- While the couscous is resting, combine the cumin, paprika and black pepper in a small bowl.
- After the resting time, use a fork to loosen the couscous grains.
Drizzle the couscous with the other tablespoon of olive oil and stir to combine. - Sprinkle the spice mixture over the couscous and mix well.
- Add the raisins, almonds, chickpeas, parsley and mint to the couscous.
Mix gently to distribute the ingredients. - Drizzle the lemon juice over the couscous and mix again.
- Taste and adjust seasoning if necessary.
- The Moroccan couscous is ready to be served.
You can serve it hot or at room temperature, as a side dish or main dish.
