For your Moroccan Couscous to be perfect, use the ingredients below and follow the preparation instructions.

Ingredients

  • 1 and 1/2 cups Moroccan couscous

  • 1 and 1/2 cups of water or vegetable broth

  • 2 tablespoons olive oil

  • 1/2 teaspoon salt

  • 1/2 teaspoon cumin powder

  • 1/2 teaspoon paprika

  • 1/4 teaspoon black pepper

  • 1/2 cup raisins

  • 1/2 cup sliced ​​and toasted almonds

  • 1/2 cup cooked chickpeas

  • 1/4 cup chopped fresh parsley

  • 1/4 cup chopped fresh mint

  • 1 lemon juice

Directions

  • Boil water or vegetable broth in a pan. 
    Add salt and 1 tablespoon of olive oil.
  • In a large bowl, place the Moroccan couscous. 
    Pour the boiling water over the couscous, covering it completely.
  • Cover the bowl with a clean cloth and let the couscous absorb the liquid for about 5-10 minutes.
  • While the couscous is resting, combine the cumin, paprika and black pepper in a small bowl.
  • After the resting time, use a fork to loosen the couscous grains. 
    Drizzle the couscous with the other tablespoon of olive oil and stir to combine.
  • Sprinkle the spice mixture over the couscous and mix well.
  • Add the raisins, almonds, chickpeas, parsley and mint to the couscous. 
    Mix gently to distribute the ingredients.
  • Drizzle the lemon juice over the couscous and mix again.
  • Taste and adjust seasoning if necessary.
  • The Moroccan couscous is ready to be served. 
    You can serve it hot or at room temperature, as a side dish or main dish.
