3 cups of wheat flour
2 teaspoons of baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup softened butter
2 cups of sugar
4 eggs
1 teaspoon vanilla extract
Juice and zest of 3 lemons
1 cup Greek yogurt
Directions
- Preheat the oven to 180°C.
Grease and flour a cake pan. - In a medium bowl, whisk together the flour, baking powder, baking soda and salt.
Reserve. - In another bowl, using an electric mixer, beat the butter and sugar until light and fluffy.
- Add the eggs, one at a time, beating well after each addition.
Add the vanilla extract and continue beating. - Mix the lemon zest and juice into the dough.
- Add the dry ingredients to the butter mixture alternately with the Greek yogurt, starting and ending with the dry ingredients.
Mix until smooth. - Pour the batter into the prepared pan and smooth the surface.
- Bake in the preheated oven for approximately 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Optional: For a simple frosting, mix lemon juice with powdered sugar and pour over the cake once it has cooled.
