Ingredients

  • 3 cups of wheat flour

  • 2 teaspoons of baking powder

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 cup softened butter

  • 2 cups of sugar

  • 4 eggs

  • 1 teaspoon vanilla extract

  • Juice and zest of 3 lemons

  • 1 cup Greek yogurt

Directions

  • Preheat the oven to 180°C. 
    Grease and flour a cake pan.
  • In a medium bowl, whisk together the flour, baking powder, baking soda and salt. 
    Reserve.
  • In another bowl, using an electric mixer, beat the butter and sugar until light and fluffy.
  • Add the eggs, one at a time, beating well after each addition. 
    Add the vanilla extract and continue beating.
  • Mix the lemon zest and juice into the dough.
  • Add the dry ingredients to the butter mixture alternately with the Greek yogurt, starting and ending with the dry ingredients. 
    Mix until smooth.
  • Pour the batter into the prepared pan and smooth the surface.
  • Bake in the preheated oven for approximately 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  • Optional: For a simple frosting, mix lemon juice with powdered sugar and pour over the cake once it has cooled.
