Ingredients
4 bags of black or green tea (or 4 tablespoons of loose tea)
1 cup white sugar
4 liters of filtered water
1 SCOBY (you can buy it online or get it from someone who makes kombucha)
1-2 cups ready-made kombucha (from a previous batch or buy commercial kombucha as a starter)
Directions
- Boil 4 liters of water and add tea bags or loose tea to a large container.
- Let the tea steep for about 10-15 minutes.
- Remove the tea bags or strain the loose tea.
- Add 1 cup of sugar to the hot tea and stir until the sugar is completely dissolved.
- Let the tea cool to room temperature.
- Pour the sweetened tea into a large glass or ceramic container.
- Add 1-2 cups of ready-made kombucha.
- Place the SCOBY on the surface of the liquid with the smoothest part facing up.
- Cover the container with a clean cloth and secure it with a rubber band so that air can circulate but bugs and dust are kept out.
- Let the kombucha ferment at room temperature (about 21-27°C) for 7-14 days.
Fermentation time may vary depending on environmental conditions and your personal taste.
The longer it ferments, the more acidic and less sweet it will be. - After primary fermentation, you can add optional flavors such as fruits, herbs or spices.
- Transfer the kombucha to airtight glass bottles, leaving about an inch of space from the top.
- Leave the sealed bottles at room temperature for another 2-7 days for a second fermentation.
This can increase the fizz and flavor. - After the second fermentation (if you choose to do so), place the kombucha in the refrigerator to stop the fermentation.
- Serve the kombucha cold and enjoy!
