Let’s make Zucchini Noodles following the step-by-step preparation instructions.

Ingredients

  • 2 medium zucchini

  • 2 tablespoons olive oil

  • Salt and pepper to taste

Directions

  • Wash and peel the zucchini, if desired. 
    Some people prefer to leave the skin on for a more rustic appearance and to obtain more nutrients.
  • Use a vegetable grater or vegetable spiralizer to turn the zucchini into thin, spaghetti-like “noodles.”
  • In a large skillet, heat the olive oil over medium heat.
  • Add the zucchini “zoodles” to the heated skillet. 
    Season with salt and pepper to taste.
  • Cook the zucchini for about 2-3 minutes, stirring occasionally. 
    You want them to be slightly softened but still crunchy.
  • Remove the “zoodles” from the heat and serve immediately. 
    You can accompany them with the sauce of your choice, such as tomato sauce, pesto, garlic and olive oil sauce, or any other sauce you prefer.
