Follow the instructions:

Ingredients

  • 500g fish fillet (white fish can be used, such as sea bass, hake, tilapia, etc.)

  • 2 tablespoons of palm oil

  • 2 tablespoons olive oil

  • 1 medium onion, cut into thin slices

  • 2 garlic cloves, chopped

  • 2 peppers (red and green), cut into slices

  • 2 ripe tomatoes, cut into slices

  • 200ml coconut milk

  • 1 lemon juice

  • Fresh coriander to taste (or parsley, if you prefer)

  • Salt and pepper to taste

Directions

  • Start by seasoning the fish with lemon juice, salt and pepper. 
    Let it marinate for about 15-20 minutes.
  • In a large pan, heat the olive oil and palm oil over medium heat.
  • Add the onion and garlic to the pan and sauté until soft and golden.
  • Add the peppers and tomatoes to the pan and sauté for a few more minutes until they begin to soften.
  • Place the fish fillets in the pan and pour the coconut milk over them.
  • Cover the pan and cook over low heat for about 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
  • Check the seasoning and adjust the salt and pepper if necessary.
  • Finish the moqueca with chopped fresh coriander leaves on top.
  • Serve the fish moqueca hot with white rice and, if desired, with traditional accompaniments such as farofa and pepper.
