Ingredients
500g fish fillet (white fish can be used, such as sea bass, hake, tilapia, etc.)
2 tablespoons of palm oil
2 tablespoons olive oil
1 medium onion, cut into thin slices
2 garlic cloves, chopped
2 peppers (red and green), cut into slices
2 ripe tomatoes, cut into slices
200ml coconut milk
1 lemon juice
Fresh coriander to taste (or parsley, if you prefer)
Salt and pepper to taste
Directions
- Start by seasoning the fish with lemon juice, salt and pepper.
Let it marinate for about 15-20 minutes. - In a large pan, heat the olive oil and palm oil over medium heat.
- Add the onion and garlic to the pan and sauté until soft and golden.
- Add the peppers and tomatoes to the pan and sauté for a few more minutes until they begin to soften.
- Place the fish fillets in the pan and pour the coconut milk over them.
- Cover the pan and cook over low heat for about 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.
- Check the seasoning and adjust the salt and pepper if necessary.
- Finish the moqueca with chopped fresh coriander leaves on top.
- Serve the fish moqueca hot with white rice and, if desired, with traditional accompaniments such as farofa and pepper.
