Ingredients

  • 2 cups of cornmeal

  • 1 cup wheat flour

  • 2 cups of sugar

  • 1 cup of milk

  • 1/2 cup vegetable oil

  • 3 eggs

  • 1 tablespoon powdered yeast

  • 1 pinch of salt

Directions

  • Preheat the oven to 180°C and grease a round mold with butter and flour.
  • In a large bowl, mix the cornmeal, wheat flour, sugar and salt.
  • In another bowl, beat the eggs with a fork or whisk until well blended. 
    Add the milk and oil, and mix well.
  • Pour the liquid mixture over the dry ingredients and stir until you get a homogeneous mass.
  • Add the baking powder and stir gently to incorporate into the dough.
  • Pour the batter into the greased tin and bake in the preheated oven for about 40 minutes, or until a toothpick inserted in the center of the cake comes out clean.
  • Remove the cake from the oven and let it cool for a few minutes before unmolding.
  • Serve the cornmeal cake warm or at room temperature.
