1 cup fresh parsley leaves, finely chopped
4 garlic cloves, chopped
2 tablespoons dried oregano
1 teaspoon red pepper flakes (optional, for a spicy touch)
1 teaspoon freshly ground black pepper
1 teaspoon cumin powder
1/2 cup red wine vinegar
1/2 cup extra virgin olive oil

- Start by finely chopping the parsley and garlic.
You can use a food processor to make the process easier. - In a bowl, combine the chopped parsley, minced garlic, oregano, red pepper flakes (if using), freshly ground black pepper, and ground cumin.
- Add the red wine vinegar to the mixture and stir well to combine the dry ingredients with the vinegar.
- Gradually add the olive oil, stirring constantly, until the sauce is well incorporated and has a slightly thick texture.
If you prefer a more liquid sauce, you can add a little more olive oil. - Taste the chimichurri and adjust the salt according to your personal taste.
