Ingredients

  • 1 cup fresh parsley leaves, finely chopped

  • 4 garlic cloves, chopped

  • 2 tablespoons dried oregano

  • 1 teaspoon red pepper flakes (optional, for a spicy touch)

  • 1 teaspoon freshly ground black pepper

  • 1 teaspoon cumin powder

  • 1/2 cup red wine vinegar

  • 1/2 cup extra virgin olive oil

  • Salt to taste

Directions

  • Start by finely chopping the parsley and garlic. 
    You can use a food processor to make the process easier.
  • In a bowl, combine the chopped parsley, minced garlic, oregano, red pepper flakes (if using), freshly ground black pepper, and ground cumin.
  • Add the red wine vinegar to the mixture and stir well to combine the dry ingredients with the vinegar.
  • Gradually add the olive oil, stirring constantly, until the sauce is well incorporated and has a slightly thick texture. 
    If you prefer a more liquid sauce, you can add a little more olive oil.
  • Taste the chimichurri and adjust the salt according to your personal taste.
  • Let the chimichurri sit for at least 30 minutes before using it. 
    This allows the flavors to develop and blend.
