Ingredients
1 kg chicken (cut into pieces)
2 cups of rice
1 chopped onion
3 cloves of garlic, chopped
2 chopped tomatoes
1 chopped green pepper
1 carrot cut into slices
1 can of peas (optional)
2 tablespoons of oil or olive oil
4 cups of chicken broth
Salt and pepper to taste
Chopped parsley and chives for garnish
Directions
- In a large pan, heat the oil or olive oil over medium heat.
Add the onion and garlic, sautéing until they are golden. - Add the chicken cut into pieces and season with salt and pepper to taste.
Cook until the chicken is browned on all sides. - Add the tomatoes, peppers and carrots to the pan.
Sauté for a few minutes until the vegetables are lightly cooked. - Add the rice to the pan and stir well so that it absorbs the flavors of the chicken and vegetables.
- Pour the chicken broth into the pan.
If you prefer, you can replace part of the broth with water.
Mix everything and let it boil. - Reduce the heat to medium-low, cover the pan and simmer for about 15 to 20 minutes, or until the rice is cooked and the liquid has been absorbed.
- If using, add the peas to the pan in the last 5 minutes of cooking.
- Check seasoning and adjust as needed.
Add more salt and pepper if desired. - Serve the chicken hot, garnished with chopped parsley and chives.
