1 head of cauliflower
1 tablespoon olive oil
1/2 chopped onion
1 clove of minced garlic
Salt and pepper to taste

Directions
- Wash and cut the cauliflower into smaller pieces. Use a food processor or grate the cauliflower to make small pieces that resemble rice.
- In a large skillet, heat the olive oil and sauté the onion until translucent.
