Ingredients

  • 2 ripe bananas

  • 2 tablespoons of butter

  • 1 medium chopped onion

  • 2 minced garlic cloves

  • 1 cup cassava flour

  • Salt to taste

  • Pepper to taste (optional)

  • Chopped parsley (optional)

Directions

  • Peel the bananas and cut them into thin slices. 
    Reserve.
  • In a large skillet, melt the butter over medium heat.
  • Add chopped onion and chopped garlic to skillet. 
    Sauté for a few minutes, until golden and soft.
  • Add the banana slices to the skillet and stir gently so that they cook evenly.
  • When the bananas are soft and starting to brown, add the cassava flour, salt and pepper (if using). 
    Mix all ingredients well.
  • Keep stirring the farofa over medium heat for about 5 minutes, until the cassava flour is slightly toasted and crispy.
  • Remove the skillet from the heat and add chopped parsley (optional) to give the farofa a touch of freshness. 
    Mix again.
  • Transfer the banana farofa to a container and serve hot as an accompaniment to meat, poultry, fish or vegetarian dishes.
