Ingredients
2 ripe bananas
2 tablespoons of butter
1 medium chopped onion
2 minced garlic cloves
1 cup cassava flour
Salt to taste
Pepper to taste (optional)
Chopped parsley (optional)
Directions
- Peel the bananas and cut them into thin slices.Â
Reserve. - In a large skillet, melt the butter over medium heat.
- Add chopped onion and chopped garlic to skillet.Â
Sauté for a few minutes, until golden and soft. - Add the banana slices to the skillet and stir gently so that they cook evenly.
- When the bananas are soft and starting to brown, add the cassava flour, salt and pepper (if using).Â
Mix all ingredients well. - Keep stirring the farofa over medium heat for about 5 minutes, until the cassava flour is slightly toasted and crispy.
- Remove the skillet from the heat and add chopped parsley (optional) to give the farofa a touch of freshness.Â
Mix again. - Transfer the banana farofa to a container and serve hot as an accompaniment to meat, poultry, fish or vegetarian dishes.
