Ingredients

  • 3 eggs

  • 2 tablespoons of butter

  • 2 cups of sugar

  • 3 cups of milk

  • 1 cup cornmeal

  • 3 tablespoons of wheat flour

  • 1 tablespoon baking powder

  • 100g grated parmesan cheese (optional, but gives a special flavor!)

  • 1 pinch of salt

  • 200g guava paste cut into small cubes

Directions

  • Preheat the oven to 180°C and grease a medium baking tin with butter and flour.
  • In a blender, beat the eggs, milk, butter and sugar until smooth.
  • Add the cornmeal, wheat flour, salt and grated cheese (if using). Beat again.
  • Lastly, add the baking powder and just pulse to mix.
  • Pour the batter into the pan. It will be very liquid — that’s how it should be!
  • Gently spread the guava cubes over the dough . They will sink naturally and melt in the oven!
  • Bake for about 50 minutes , until lightly browned on top and the middle is still creamy.
  • Serve while still warm, with the guava paste melting!
