Ingredients

  • 500g minced meat (preferably duckling)

  • 1 cup of wheat for kibbeh

  • 1 large chopped onion

  • 2 minced garlic cloves

  • 1 teaspoon of Syrian pepper

  • 1 teaspoon cumin powder

  • Salt to taste

  • Frying oil

Directions

  • Place the wheat in a bowl and add enough water to cover it. 
    Let it soak for at least 30 minutes.
  • In a pan, sauté the onion and garlic in a little oil until soft.
  • In a large bowl, combine the ground beef, sauteed onion, sylli pepper, ground cumin and salt to taste. 
    Mix well.
  • Add the pre-hydrated wheat to the ground meat mixture and knead with your hands until well incorporated.
  • With wet hands, form small balls of meat and flatten them slightly to form kibbeh.
  • Heat the oil in a deep skillet over medium-high heat.
  • When the oil is hot, fry the kibbeh in small batches until golden brown and crispy. 
    Drain on absorbent paper before serving.
  • Serve the fried kebab with lemon and mint sauce to taste.
