Ingredients

  • 1 cup natural yogurt (can be whole or skimmed)

  • 1 cup of sugar

  • 3 eggs

  • 1/2 cup vegetable oil (such as canola or sunflower oil)

  • 2 cups of wheat flour

  • 1 tablespoon baking powder

  • 1 teaspoon vanilla essence (optional)

  • A bit of salt

Directions

  • Preheat the oven to 180°C and grease a cake tin with butter and flour, or line it with baking paper.
  • In a large bowl, whisk together the yogurt, sugar, eggs, oil and vanilla extract (if using).
  • In another bowl, sift the wheat flour, baking powder and salt.
  • Gradually add the dry ingredients to the liquid mixture, mixing well until you obtain a homogeneous dough.
  • Pour the batter into the prepared pan.
  • Bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • Remove the cake from the oven and let it cool in the pan for a few minutes before transferring it to a cooling rack to cool completely.
  • When the cake is completely cool, you can sprinkle it with icing sugar or serve as you prefer.
