Ingredients
2 tablespoons olive oil
1 medium onion, chopped
2 garlic cloves, chopped
3 carrots, peeled and cut into slices
2 potatoes, peeled and cut into cubes
2 celery stalks, cut into slices
1 zucchini, cut into cubes
1 tomato, chopped
1/2 cup peas (can be frozen)
8 cups of vegetable broth (can be homemade or purchased ready-made)
Salt and pepper to taste
1 teaspoon dried herbs (such as thyme, oregano, basil)
1 bay leaf
1 cup small pasta (optional)
Directions
- In a large pan, heat the olive oil over medium heat.
Add the onion and garlic and sauté for a few minutes until soft and fragrant. - Add the carrots, potatoes, celery, zucchini, tomatoes and peas to the pan.
- Saute for a few more minutes, stirring occasionally.
- Pour the vegetable broth into the pan and add the bay leaf, dried herbs, salt and pepper to taste.
Bring to a boil, then reduce heat to medium-low. - Cook for about 20-25 minutes, or until the vegetables are tender.
- If desired, add the noodles to the soup and cook for the time indicated on the noodles package, stirring occasionally.
- Taste the soup and adjust the seasoning if necessary.
Remove the bay leaf. - Serve the soup hot, accompanied by bread or toast, if desired.
