Ingredients

  • 2 tablespoons olive oil

  • 1 medium onion, chopped

  • 2 garlic cloves, chopped

  • 3 carrots, peeled and cut into slices

  • 2 potatoes, peeled and cut into cubes

  • 2 celery stalks, cut into slices

  • 1 zucchini, cut into cubes

  • 1 tomato, chopped

  • 1/2 cup peas (can be frozen)

  • 8 cups of vegetable broth (can be homemade or purchased ready-made)

  • Salt and pepper to taste

  • 1 teaspoon dried herbs (such as thyme, oregano, basil)

  • 1 bay leaf

  • 1 cup small pasta (optional)

Directions

  • In a large pan, heat the olive oil over medium heat. 
    Add the onion and garlic and sauté for a few minutes until soft and fragrant.
  • Add the carrots, potatoes, celery, zucchini, tomatoes and peas to the pan.
  • Saute for a few more minutes, stirring occasionally.
  • Pour the vegetable broth into the pan and add the bay leaf, dried herbs, salt and pepper to taste. 
    Bring to a boil, then reduce heat to medium-low.
  • Cook for about 20-25 minutes, or until the vegetables are tender.
  • If desired, add the noodles to the soup and cook for the time indicated on the noodles package, stirring occasionally.
  • Taste the soup and adjust the seasoning if necessary. 
    Remove the bay leaf.
  • Serve the soup hot, accompanied by bread or toast, if desired.
