Ingredients
1 kg of ripe tomatoes
1 medium onion, chopped
2 garlic cloves, minced
2 tablespoons of olive oil
1 teaspoon of sugar
salt to taste
pepper to taste
Fresh basil leaves (optional)
Directions
- Wash the tomatoes well and make an “X” cut in the bottom of each one.
- In a large pot, bring water to boil.
Add the tomatoes and let them cook for about 1 minute. - Remove the tomatoes from the boiling water and place them in a bowl of ice water to stop the cooking process.
- Remove the skin from the tomatoes by pulling it from the “X” cut.
Cut the tomatoes in half and remove the seeds. - In a large pan, heat the oil over medium heat.
Add chopped onion and garlic and sauté until soft and lightly browned. - Add chopped tomatoes to the pan and stir well.
Let it cook over low heat for about 15-20 minutes, stirring occasionally. - Mash the tomatoes with a wooden spoon or use a hand mixer for a smoother consistency.
- Season the sauce with salt, pepper and sugar.
Adjust the amounts according to your personal taste. - If desired, add some fresh basil leaves to the sauce and let it cook for a few more minutes.
- Remove the sauce from the heat and let it cool slightly before using.
You can store it in an airtight container in the refrigerator for up to a week.
