Creamy, tasty and easy to make, this recipe is a guaranteed hit at the table.

Ingredients

  • 500g cassava (peeled and cut into pieces)

  • 2 tablespoons butter

  • 1/2 cup milk (or cream for extra creaminess)

  • 1/4 cup grated parmesan cheese (optional)

  • Salt to taste

  • Black pepper to taste

  • Chopped parsley for garnish (optional)

Directions

  • In a large pot, cook the cassava in salted water until very soft, about 25-30 minutes.
  • Drain the cassava and remove any central fibers, if any.
  • Mash the cassava while it is still hot with a potato masher or a fork until it forms a smooth puree.
  • In a pan, melt the butter and add the milk (or cream), mixing well.
  • Add the cassava puree to the pan and stir until all the ingredients are incorporated.
  • Add the Parmesan cheese, if using, and season with salt and pepper to taste.
  • Stir until the puree is smooth and creamy.
  • Serve hot, garnished with chopped parsley, if desired.
