Ingredients
500g cassava (peeled and cut into pieces)
2 tablespoons butter
1/2 cup milk (or cream for extra creaminess)
1/4 cup grated parmesan cheese (optional)
Salt to taste
Black pepper to taste
Chopped parsley for garnish (optional)
Directions
- In a large pot, cook the cassava in salted water until very soft, about 25-30 minutes.
- Drain the cassava and remove any central fibers, if any.
- Mash the cassava while it is still hot with a potato masher or a fork until it forms a smooth puree.
- In a pan, melt the butter and add the milk (or cream), mixing well.
- Add the cassava puree to the pan and stir until all the ingredients are incorporated.
- Add the Parmesan cheese, if using, and season with salt and pepper to taste.
- Stir until the puree is smooth and creamy.
- Serve hot, garnished with chopped parsley, if desired.
