Ingredients

  • 500g sour cassava starch

  • 250ml of water

  • 125ml vegetable oil

  • 2 eggs

  • 150g grated cheese (can be Minas or Parmesan cheese)

  • Salt to taste

Directions

  • Preheat the oven to 180°C (medium temperature) and line a baking tray with baking paper.
  • In a pan, heat the water and oil until it boils. 
    As soon as it starts to boil, turn off the heat and add the sour cassava starch. 
    Mix well until the dough is homogeneous and the mixture cools down a little.
  • Add the eggs to the mixture and continue mixing until they are completely incorporated into the dough. 
    The dough will be sticky at this point.
  • Add the grated cheese and mix until it is evenly distributed throughout the dough.
  • Now, with your hands greased with a little oil, make small balls or stick shapes with the dough and place them on the prepared baking sheet.
  • Leave a space of about 2-3 centimeters between each cookie, as they will rise a little during baking.
  • Place the baking tray in the preheated oven and bake the cookies for approximately 20-25 minutes, or until they are golden and crispy.
  • Remove the cookies from the oven and let them cool before removing them from the pan. 
    They will harden a little as they cool.
  • Once they are completely cool, your tapioca starch cookies are ready to enjoy! 
    Serve as a delicious snack.
