Ingredients

  • 500g wheat for kibbeh

  • 500g ground meat (can be beef, lamb or chicken)

  • 1 large onion, chopped

  • 2 garlic cloves, chopped

  • 1/2 cup fresh mint, chopped

  • 1 lemon juice

  • 2 teaspoons cumin powder

  • Salt and pepper to taste

  • 2 tablespoons olive oil

  • Cottage cheese, white cheese or other cheese of your choice (optional)

Directions

  • Wash the kibbeh wheat well and soak in cold water for about 1 hour. 
    Then, drain the wheat and squeeze to remove excess water.
  • In a large bowl, combine the drained wheat, ground beef, onion, garlic, mint, lemon juice, cumin, salt, pepper and olive oil.
  • Mix all ingredients well until you obtain a homogeneous dough.
  • Preheat the oven to 200°C.
  • In a refractory greased with olive oil, place half of the kibbeh dough and press well so that it is uniform.
  • If you wish to add a filling, spread the cream cheese, white cheese or other cheese of your choice over the dough in the refractory.
  • Cover the filling with the other half of the kibbeh dough, pressing again to make it uniform.
  • Use a knife to score the top of the kibbeh, forming diamonds or squares.
  • Place in the preheated oven and bake for approximately 30-40 minutes, or until the kibbeh is golden and cooked through.
  • Remove from the oven and let rest for a few minutes before slicing and serving.
  • Serve the roasted kibbeh with side dishes of your choice, such as salad, yogurt sauce or tahini.
