Ingredients
3 ripe bananas
1 cup of rolled oats
2 eggs
1/4 cup vegetable oil (such as canola, sunflower, or melted coconut oil)
1/2 cup sugar (you can adjust the amount according to your taste)
1 teaspoon vanilla essence (optional)
1 teaspoon of baking powder
1/2 teaspoon ground cinnamon (optional)
A bit of salt
Directions
- Preheat the oven: Preheat the oven to 180°C.
Grease a cake pan with oil or butter and sprinkle with a little flour to prevent the cake from sticking. - Dough preparation: In a blender or food processor, place the bananas, eggs, oil and vanilla essence (if using).
Mix until you get a smooth mixture. - Mix dry ingredients: In a separate bowl, combine rolled oats, sugar, baking powder, ground cinnamon (if using) and a pinch of salt.
- Combine ingredients: Pour the liquid mixture from the blender over the dry ingredients in the bowl.
Mix gently until everything is well incorporated.
If desired, you can add small pieces of banana to the dough for a touch of texture. - Assembling and baking: Pour the batter into the prepared pan and spread evenly.
If you want, you can decorate the top with some thin slices of banana.
Place in the preheated oven and bake for approximately 30-40 minutes, or until a toothpick inserted into the center comes out clean. - Cooling and serving: Remove the cake from the oven and let it cool in the pan for a few minutes before transferring it to a cooling rack.
Once completely cooled, cut into slices and serve.
