Ingredients
2 cups of cooked rice
3 eggs
1 cup of milk
1/4 cup vegetable oil
1 cup of sugar
1 teaspoon of baking powder
1 teaspoon vanilla essence (optional)
A bit of salt
Directions
- Preheat the oven to 180°C and grease a cake tin.
- Place the cooked rice, eggs, milk and oil in a blender or food processor.
Mix until you obtain a homogeneous mixture. - Add the sugar, vanilla extract (if using) and a pinch of salt to the mixture and beat again until everything is well combined.
- Finally, add the baking powder and beat quickly just to incorporate it into the dough.
- Pour the batter into the prepared cake pan.
- Bake in the preheated oven for about 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Remove the cake from the oven and let it cool before unmolding.
