Ingredients
1 cup of wheat flour
1/4 cup sugar
1/2 cup cold butter, cut into pieces
1 egg yolk
1 ripe pineapple, peeled and cut into pieces
1/2 cup sugar
2 tablespoons cornstarch
Juice of half a lemon
1 cup of cream
2 tablespoons of sugar
Directions
- Start by preparing the dough.
In a bowl, mix the wheat flour and sugar.
Add cold butter and egg yolk.
Mix everything until you get a homogeneous dough.
If necessary, add a little ice water to make the dough easier to work with. - Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- While the dough is in the fridge, prepare the filling.
In a pan, place the pineapple pieces, sugar and lemon juice. - Cook over medium heat until the pineapple is soft and the liquid has reduced slightly.
- Dissolve the cornstarch in a little water and add it to the pan with the pineapple.
Cook until the filling thickens.
Let cool. - Preheat the oven to 180°C.
- Roll out the dough on a floured surface and line the bottom of a pie dish.
Make holes in the dough with a fork and bake for about 15 minutes, or until golden. - Remove the dough from the oven and let it cool slightly.
- Place the pineapple filling over the baked dough.
- In a bowl, beat the cream with the sugar until you get whipped cream.
- Spread the whipped cream over the pineapple filling.
- Place the pie in the refrigerator for a few hours so that it is well chilled before serving.
- Serve the pineapple pie chilled and enjoy!
