To prepare your Pineapple Pie you will need the ingredients below and follow the instructions.

Ingredients

  • 1 cup of wheat flour

  • 1/4 cup sugar

  • 1/2 cup cold butter, cut into pieces

  • 1 egg yolk

  • 1 ripe pineapple, peeled and cut into pieces

  • 1/2 cup sugar

  • 2 tablespoons cornstarch

  • Juice of half a lemon

  • 1 cup of cream

  • 2 tablespoons of sugar

Directions

  • Start by preparing the dough. 
    In a bowl, mix the wheat flour and sugar. 
    Add cold butter and egg yolk. 
    Mix everything until you get a homogeneous dough. 
    If necessary, add a little ice water to make the dough easier to work with.
  • Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  • While the dough is in the fridge, prepare the filling. 
    In a pan, place the pineapple pieces, sugar and lemon juice.
  • Cook over medium heat until the pineapple is soft and the liquid has reduced slightly.
  • Dissolve the cornstarch in a little water and add it to the pan with the pineapple. 
    Cook until the filling thickens. 
    Let cool.
  • Preheat the oven to 180°C.
  • Roll out the dough on a floured surface and line the bottom of a pie dish. 
    Make holes in the dough with a fork and bake for about 15 minutes, or until golden.
  • Remove the dough from the oven and let it cool slightly.
  • Place the pineapple filling over the baked dough.
  • In a bowl, beat the cream with the sugar until you get whipped cream.
  • Spread the whipped cream over the pineapple filling.
  • Place the pie in the refrigerator for a few hours so that it is well chilled before serving.
  • Serve the pineapple pie chilled and enjoy!
