Ingredients
1 kg of beef ribs in pieces
1 kg of cassava, peeled and cut into pieces
2 medium onions, cut into rings
4 cloves of garlic, chopped
2 ripe tomatoes, chopped
2 finger peppers (optional, adjust according to your taste)
Salt and black pepper to taste
Chopped green chives (parsley and chives)
Oil or olive oil for sautéing
Enough water to cook the meat and cassava
Directions
- In a pressure cooker, heat a little oil or olive oil and sauté the onion and garlic until golden.
- Add the beef rib pieces and sauté until they are well browned on all sides.
- Add the chopped tomatoes and finger peppers (if using), mixing well.
- Add enough water to cover the meat in the pan.
Season with salt and black pepper to taste. - Cover the pressure cooker and cook the meat for about 30-40 minutes after the pressure cooker reaches pressure.
The meat should be very tender and falling off the bones. - While the meat is cooking, cook the cassava pieces in a separate pan with salted water until they are very soft.
- Drain the water and reserve the cooked cassava.
- After the meat is cooked, remove the pressure from the pan and check the seasoning.
If necessary, adjust the salt and pepper. - Add the cooked cassava pieces to the pan with the meat.
Mix well, carefully so as not to break up the cassava. - Let it cook for a few more minutes so that the cassava absorbs some of the flavor of the broth.
- Sprinkle chopped green chillies over the mixture before serving.
- The stuffed cow is ready to be served.
It can be accompanied by white rice, beans or other side dishes of your choice.
