Ingredients

  • 1 large cauliflower

  • 2 tablespoons olive oil

  • 1 small onion, chopped

  • 2 garlic cloves, chopped

  • Salt and pepper to taste

  • Seasonings to taste (e.g. red pepper flakes, paprika, cumin)

  • Chopped parsley or coriander (optional, for garnish)

Directions

  • Wash the cauliflower well and dry it with paper towel.
  • Remove the leaves and stem, leaving only the florets.
  • Use a food processor or grater to puree the cauliflower florets until they have a texture similar to rice. 
    You can also do this manually with a sharp knife.
  • In a large skillet, heat the olive oil over medium heat.
  • Add the chopped onion and chopped garlic to the pan and sauté until soft and golden.
  • Add the crushed cauliflower florets to the pan.
  • Cook for 5-7 minutes, stirring occasionally, until the cauliflower is tender but not too mushy. 
    You want it to maintain a rice-like texture.
  • Season the cauliflower rice with salt, pepper and other seasonings of your choice. 
    You can add red pepper flakes for a spicy kick or paprika for a smoky flavor, for example.
  • Transfer the cauliflower rice to a serving plate.
  • If desired, garnish with chopped parsley or cilantro.
