Ingredients
1 large cauliflower
2 tablespoons olive oil
1 small onion, chopped
2 garlic cloves, chopped
Salt and pepper to taste
Seasonings to taste (e.g. red pepper flakes, paprika, cumin)
Chopped parsley or coriander (optional, for garnish)
Directions
- Wash the cauliflower well and dry it with paper towel.
- Remove the leaves and stem, leaving only the florets.
- Use a food processor or grater to puree the cauliflower florets until they have a texture similar to rice.
You can also do this manually with a sharp knife. - In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion and chopped garlic to the pan and sauté until soft and golden.
- Add the crushed cauliflower florets to the pan.
- Cook for 5-7 minutes, stirring occasionally, until the cauliflower is tender but not too mushy.
You want it to maintain a rice-like texture. - Season the cauliflower rice with salt, pepper and other seasonings of your choice.
You can add red pepper flakes for a spicy kick or paprika for a smoky flavor, for example. - Transfer the cauliflower rice to a serving plate.
- If desired, garnish with chopped parsley or cilantro.
