Ingredients

  • 1 medium strawberry

  • 500g cleaned and peeled shrimp

  • 2 tablespoons of olive oil

  • 1 medium chopped onion

  • 2 minced garlic cloves

  • 1 chopped red pepper

  • 1 chopped tomato

  • 1 can of tomato puree

  • 200 ml of coconut milk

  • 1 tablespoon palm oil (optional)

  • salt to taste

  • Black pepper to taste

  • Chopped parsley or cilantro to garnish

Directions

  • Preheat the oven to 180°C.
  • Wash the squash well, cut a lid at the top and remove the seeds and fibers from the inside. 
    Reserve.
  • In a large pan, heat the olive oil over medium heat and saute the onion and garlic until golden.
  • Add the red bell pepper and chopped tomato and sauté for a few more minutes, until the vegetables are soft.
  • Add the prawns and cook for approximately 3 minutes, until they are pink and cooked through.
  • Add the tomato puree, coconut milk and palm oil (if using) to the pan. 
    Season with salt and pepper to taste.
  • Mix all the ingredients well and cook for another 5 minutes over low heat.
  • Meanwhile, place the squash on a baking sheet and place in the preheated oven for about 30 minutes, or until the pulp is tender when pierced with a fork.
  • Remove the pumpkin from the oven and carefully pour the braised shrimp into it.
  • Take the stuffed strawberry back to the oven for another 10 minutes.
  • Remove from oven and garnish with chopped parsley or cilantro before serving.
