Ingredients
1 medium strawberry
500g cleaned and peeled shrimp
2 tablespoons of olive oil
1 medium chopped onion
2 minced garlic cloves
1 chopped red pepper
1 chopped tomato
1 can of tomato puree
200 ml of coconut milk
1 tablespoon palm oil (optional)
salt to taste
Black pepper to taste
Chopped parsley or cilantro to garnish
Directions
- Preheat the oven to 180°C.
- Wash the squash well, cut a lid at the top and remove the seeds and fibers from the inside.Â
Reserve. - In a large pan, heat the olive oil over medium heat and saute the onion and garlic until golden.
- Add the red bell pepper and chopped tomato and sauté for a few more minutes, until the vegetables are soft.
- Add the prawns and cook for approximately 3 minutes, until they are pink and cooked through.
- Add the tomato puree, coconut milk and palm oil (if using) to the pan.Â
Season with salt and pepper to taste. - Mix all the ingredients well and cook for another 5 minutes over low heat.
- Meanwhile, place the squash on a baking sheet and place in the preheated oven for about 30 minutes, or until the pulp is tender when pierced with a fork.
- Remove the pumpkin from the oven and carefully pour the braised shrimp into it.
- Take the stuffed strawberry back to the oven for another 10 minutes.
- Remove from oven and garnish with chopped parsley or cilantro before serving.
