Ingredients

  • 500g carioquinha beans or string beans

  • 200g diced smoked bacon

  • 200g Calabrian sausage, sliced

  • 1 large chopped onion

  • 3 cloves of garlic, chopped

  • 2 cups of cassava flour

  • 1 bunch of kale, finely sliced

  • Salt to taste

  • Green scent to taste (parsley and chives)

Directions

  • Cook the beans in salted water until they are soft but still firm. Drain and reserve.
  • In a large frying pan, fry the bacon until it starts to brown.
  • Add the pepperoni sausage and fry until it is golden brown.
  • Add the chopped onion and garlic and sauté until the onion is transparent.
  • Mix the cooked beans in the pan with the fried ingredients. Stir well to incorporate the flavors.
  • In another pan, heat some oil and add the cassava flour.
  • Stir constantly until the flour is lightly golden and crunchy.
  • Add the farofa to the bean mixture in the skillet and stir well.
  • Add the sliced ​​kale and stir until it is slightly wilted.
  • Check the seasoning and adjust the salt if necessary.
  • Sprinkle green scent on top of the ready-made tropeiro beans.
  • Serve hot as a side dish or main dish. It can be accompanied by white rice, farofa and other garnishes of your choice.
