Ingredients
1 ripe pineapple, peeled and diced
2 cups of sugar
1/4 cup lemon juice
1/2 teaspoon of salt
Directions
- In a large pot, add the pineapple, sugar, lemon juice and salt.
- Stir well and let sit for about 30 minutes for the sugar to begin to dissolve.
- Place the pan over medium heat and bring to a boil, stirring occasionally.
- Reduce the heat to medium-low and let the mixture cook for about 45 minutes or until the mixture has thickened to a glossy jelly.
- During cooking, stir the mixture every 10 minutes to prevent it from sticking to the bottom of the pan.
- When the jam is ready, remove the pan from the heat and let it cool for a few minutes.
- Transfer the jam to a sterilized jar and let cool completely before covering and storing in the fridge.
Notes
- Note: You can adjust the amount of sugar to your sweetness preference.
Also, you can add a few pieces of pineapple to the jam before storing if you wish.
