Oat Cake with Banana

  • 2 eggs

  • 2 mashed ripe bananas

  • 1/2 cup coconut oil

  • 1/2 cup brown sugar

  • 1 cup fine rolled oats

  • 1 tablespoon powdered yeast


  • Preheat the oven to 180°C.
  • In a large bowl, mix mashed bananas, eggs, brown sugar and coconut oil until smooth.
  • Add the oats in fine flakes and mix again.
  • Lastly, add the baking powder and mix gently until incorporated.
  • Pour the mixture into a cake tin greased with coconut oil and bake for about 30 to 35 minutes or until the cake is golden brown and a toothpick inserted in the center comes out clean.
  • Remove from oven, let cool slightly before unmolding and serving.
  • You can add other fruits or ingredients like ground cinnamon to give your banana oatmeal cake a special touch.
