Ingredients
1 and 1/2 cups crushed cornstarch biscuits
6 tablespoons melted unsalted butter
1 can of condensed milk
1/2 cup lemon juice
Lemon zest to decorate
3 separate eggs
1/4 teaspoon of salt
Icing sugar for sprinkling
Directions
- Preheat the oven to 180°C.
- In a bowl, mix crushed biscuits and melted butter.
Press the mixture into the bottom and sides of a 9-inch tart pan with a removable bottom.
Bake for about 10 minutes or until lightly golden.
Let cool. - In another bowl, mix condensed milk, lemon juice and egg yolks.
Beat with a fouet until it’s homogeneous.
Pour the mixture into the cooled biscuit base. - Beat the egg whites with the salt until stiff peaks form.
Gradually add 1/4 cup sugar, beating until glossy and stiff. - Spread the egg whites over the lemon mixture, covering completely.
Use a putty knife to level the surface. - Place the pie in the oven for about 15 minutes or until the egg whites are golden brown.
Let it cool completely. - Decorate the pie with lemon zest and sprinkle icing sugar on top.
Serve chilled.
