Ingredients
1 kg of sugar
500 ml of water
1 kg grated fresh coconut
Oil for greasing
Directions
- In a large pan, place the sugar and water and lead to medium fire, stirring well until all the sugar dissolves.
- Add grated coconut to the pan and mix well.
- Cook over low heat, stirring constantly until the mixture begins to pull away from the bottom of the pan and form a thick caramel.
- Pour the mixture into an oiled baking dish, pressing down well with a spoon to level it.
- Allow to cool and then cut into squares or diamonds.
- Serve immediately or store in an airtight container.
