Ingredients

  • Peel of 1 pumpkin

  • 1 chopped tomato

  • Juice of 1/2 lemon

  • 1/2 chopped onion

  • Chopped green flavor to taste

  • Black pepper to taste

  • Olive oil to taste

  • Salt to taste

  • Water

Directions

  • Grate the pumpkin peel with the coarse part of the grater or chop it with a knife into thin strips.
  • Add enough water to a pan to cover the pumpkin skin, salt to taste and heat until it boils.
  • Add the shell and let it boil for 3 minutes. Turn off the heat, drain the water and transfer the peel to a container.
  • Add the chopped onion, chopped green chilli and tomato, lemon juice, black pepper and olive oil to taste.
  • Add the salt, mix well to homogenize and the pumpkin peel salad is ready.
