Ingredients

  • 400g pasta (spaghetti, fettuccine, or whatever you prefer)

  • 4 garlic cloves, finely sliced

  • 1/2 teaspoon red pepper flakes (optional, adjust to your taste)

  • 1/2 cup extra virgin olive oil

  • Salt to taste

  • Black pepper to taste

  • Chopped fresh parsley to finish (optional)

  • Grated parmesan cheese to serve (optional)

Directions

  • Cook the pasta: In a large pot, boil salted water and cook the pasta according to package instructions until al dente. 
    Reserve a cup of the cooking water before draining.
  • Preparing the garlic and oil: While the pasta cooks, heat the olive oil in a large skillet over medium heat. 
    Add the garlic slices and red pepper flakes (if using). 
    Cook the garlic until it is golden but not burnt, stirring constantly to avoid burning.
  • Assembly: Drain the cooked pasta and add to the frying pan with the garlic and oil. 
    Stir well so that the pasta is completely coated in the olive oil and garlic. 
    If necessary, add a little of the reserved cooking water to obtain a creamier consistency.
  • Season and finish: Season with salt and black pepper to taste. 
    Add chopped fresh parsley, if desired. 
    Stir again to incorporate the flavors.
  • Serve: Transfer the garlic and oil noodles to serving plates. 
    If desired, sprinkle grated parmesan cheese on top.
