Cornmeal cake with coconut, a quick and easy recipe to make, beaten by hand. 
This cake from grandma Ana is special, for its smell and taste.

Ingredients

  • 3 eggs

  • 1 cup of sugar (200gr)

  • 1 cup coconut milk (240 ml)

  • 1/2 cup oil (120ml)

  • 50g grated coconut

  • 1 cup of fuba

  • 1/2 cup of wheat flour (70gr)

  • 1 teaspoon powdered yeast

  • Syrup
  • 1/2 cup coconut milk

  • 1 tablespoon of sugar

  • Grated coconut to decorate

Directions

  • In a bowl mix the eggs with the sugar, coconut milk and oil, mix well.
  • Add the grated coconut, cornmeal, wheat flour and yeast, mix well, if you prefer, you can beat all the ingredients in the blender.
  • Grease an 18cm mold. in diameter with oil and cornmeal, and pour the cake mix.
  • Take to preheated oven at 180 degrees for 35 minutes.
  • Syrup
  • Mix the coconut milk and sugar and pour it on the cake, decorate with grated coconut.
