Ingredients

  • 2 liters of whole milk

  • 1 box of cream

  • 1 tablespoon of salt

  • 1 tablespoon white vinegar or lemon juice

  • 1/2 tablespoon liquid rennet

Directions

  • In a saucepan, heat the milk and cream over medium heat, stirring constantly, until it starts to boil.
  • Turn off the heat and add the salt and vinegar or lemon juice, stirring well. 
    Let the mixture rest for 10 minutes.
  • Add the liquid rennet to the mixture and mix gently.
  • Cover the pan with a clean cloth and let the mixture sit for about 1 hour, or until the milk is completely curdled.
  • With a slotted spoon, remove the curds and place in a cheesecloth or muslin cloth. 
    Let the whey drain for about 1 hour.
  • Once the whey has completely drained, transfer the curds to a bowl and mix gently until creamy and smooth.
  • Take it to the fridge and let it cool before serving.
