Ingredients
2 liters of whole milk
1 box of cream
1 tablespoon of salt
1 tablespoon white vinegar or lemon juice
1/2 tablespoon liquid rennet
Directions
- In a saucepan, heat the milk and cream over medium heat, stirring constantly, until it starts to boil.
- Turn off the heat and add the salt and vinegar or lemon juice, stirring well.Â
Let the mixture rest for 10 minutes. - Add the liquid rennet to the mixture and mix gently.
- Cover the pan with a clean cloth and let the mixture sit for about 1 hour, or until the milk is completely curdled.
- With a slotted spoon, remove the curds and place in a cheesecloth or muslin cloth.Â
Let the whey drain for about 1 hour. - Once the whey has completely drained, transfer the curds to a bowl and mix gently until creamy and smooth.
- Take it to the fridge and let it cool before serving.
