Ingredients
3 medium grated carrots
3 eggs
1 cup of sugar
1/2 cup oil
2 cups of wheat flour
1 tablespoon powdered yeast
1 pinch of salt
1/2 cup of milk
1 cup of sugar for the chocolate coating
1/2 cup milk for the chocolate coating
2 tablespoons of margarine for the chocolate coating
Sprinkles to decorate
Directions
- Preheat the oven to 180°C.
- In a bowl, mix grated carrots with eggs, sugar and oil.
- In another bowl, mix the wheat flour, baking powder and pinch of salt.
- Add the wheat flour mixture to the carrot mixture and mix well.
- Add the milk and mix again.
- Pour the mixture into a greased and floured form.
- Bake for about 40 minutes, or until golden and cooked through.
- Do the toothpick test to see if it’s done.
- While the cake bakes, prepare the chocolate frosting.
- In a pan, mix the sugar, milk and margarine.
- Take to the low fire and stir until the mixture is homogeneous and starts to boil.
- Turn off the heat and set aside.
- Once the cake is ready, let it cool for a few minutes and unmold.
- Pour the chocolate frosting over the cake and spread it out with a spatula.
- Sprinkle sprinkles over the topping and serve.
