Carrot Cake with Chocolate Icing and Sprinkles

  • 3 medium grated carrots

  • 3 eggs

  • 1 cup of sugar

  • 1/2 cup oil

  • 2 cups of wheat flour

  • 1 tablespoon powdered yeast

  • 1 pinch of salt

  • 1/2 cup of milk

  • 1 cup of sugar for the chocolate coating

  • 1/2 cup milk for the chocolate coating

  • 2 tablespoons of margarine for the chocolate coating

  • Sprinkles to decorate


  • Preheat the oven to 180°C.
  • In a bowl, mix grated carrots with eggs, sugar and oil.
  • In another bowl, mix the wheat flour, baking powder and pinch of salt.
  • Add the wheat flour mixture to the carrot mixture and mix well.
  • Add the milk and mix again.
  • Pour the mixture into a greased and floured form.
  • Bake for about 40 minutes, or until golden and cooked through.
  • Do the toothpick test to see if it’s done.
  • While the cake bakes, prepare the chocolate frosting.
  • In a pan, mix the sugar, milk and margarine.
  • Take to the low fire and stir until the mixture is homogeneous and starts to boil.
  • Turn off the heat and set aside.
  • Once the cake is ready, let it cool for a few minutes and unmold.
  • Pour the chocolate frosting over the cake and spread it out with a spatula.
  • Sprinkle sprinkles over the topping and serve.
