Cornstarch Biscuits (Gluten Free)

Ingredients

  • 1 yolk

  • 5 tablespoons cornstarch

  • 4 tablespoons of rice flour

  • 3 tablespoons of creamy butter

  • 2 tablespoons of refined sugar

  • 1 teaspoon of brown sugar

  • Vanilla essence (optional)

  • 1 pinch of salt

Directions

  • Place the refined sugar, brown sugar and creamy butter in a container.
  • Mix well until it forms a light cream. Add the yolk and mix again.
  • Add the vanilla, rice flour, cornstarch, salt and mix well.
  • Place a piece of plastic wrap on a counter and sprinkle some rice flour on it.
  • Add the dough, sprinkle more rice flour and cover with another piece of plastic wrap.
  • Roll out the dough with a rolling pin until it is 10 to 20 millimeters thick.
  • Remove imperfections from the dough with a knife until it becomes rectangular.
  • Cut the dough vertically and then horizontally to shape the cookies.
  • Poke holes in the cookies with a toothpick and place them on a greased baking tray lined with baking paper.
  • Bake in a preheated oven at 180º₢ for 10 minutes or until golden on the sides.
  • Wait for them to cool before taking them out of the pan and the cookies are ready.
