Ingredients
500g of baroa potato (cassava-salsa) peeled and cut into cubes
1 medium chopped onion
2 minced garlic cloves
2 tablespoons of olive oil
1 liter of vegetable broth
Salt and pepper to taste
Chopped parsley to garnish
Directions
- In a large pan, heat the olive oil over medium heat.
- Add chopped onion and garlic and sauté until golden and fragrant.
- Add the baroa potato cubes and sauté for a few minutes.
- Add the vegetable broth to the pot, enough to cover the potatoes.
- Season with salt and pepper to taste.
- Bring the soup to a boil, then reduce the heat to medium-low.
- Cook for about 20-25 minutes, or until the sweet potatoes are tender and can be easily mashed with a fork.
- Remove the pan from the heat and, with the aid of a mixer or blender, beat the soup until obtaining a creamy consistency.
- Adjust seasoning if necessary.
- Serve the soup hot and garnish with chopped parsley on top.
