Whether celebrating Christmas or everyday life, this panettone cake is sure to make anyone want to try it!

Ingredients

  • 2 whole eggs

  • pinch of salt

  • 2 tablespoons of raisins

  • 2 tablespoons candied fruit

  • 2 teaspoons chemical yeast

  • 2 tablespoons of cooking sugar

  • 1 tablespoon grated coconut

  • 1 cup (tea) of rice flour (200 ml)

  • 1 cup (tea) coconut milk (200 ml)

  • 1/2 cup fine cornmeal (tea)

  • Candied fruit to decorate

  • Apricot jam to taste for brushing

Directions

  • In a bowl add the rice flour, cornmeal, eggs, grated coconut, sugar, salt and mix well.
  • Add the coconut milk in two portions while mixing the ingredients well until the dough is smooth.
  • Add the candied fruit and raisins to the dough and mix well. 
    Put the baking soda and mix gently.
  • Grease a mold with oil and flour, then add the dough and decorate with candied fruit on top.
  • Preheat the oven to 180º₢ for 5 minutes, place the cake, increase it to 200º₢ and bake it for about 30 minutes.
  • Remove the cake and wait to cool at room temperature. 
    Develop, brush the apricot jam over the top and the panettone cake is ready.
