To make your Pineapple Jelly, use the ingredients from the list and follow the instructions.

Ingredients

  • 1 ripe pineapple, peeled and diced

  • 2 cups of sugar

  • 1/4 cup lemon juice

  • 1/2 teaspoon of salt

Directions

  • In a large pot, add the pineapple, sugar, lemon juice and salt.
  • Stir well and let sit for about 30 minutes for the sugar to begin to dissolve.
  • Place the pan over medium heat and bring to a boil, stirring occasionally.
  • Reduce the heat to medium-low and let the mixture cook for about 45 minutes or until the mixture has thickened to a glossy jelly.
  • During cooking, stir the mixture every 10 minutes to prevent it from sticking to the bottom of the pan.
  • When the jam is ready, remove the pan from the heat and let it cool for a few minutes.
  • Transfer the jam to a sterilized jar and let cool completely before covering and storing in the fridge.

Notes

  • Note: You can adjust the amount of sugar to your sweetness preference.
    Also, you can add a few pieces of pineapple to the jam before storing if you wish.
