Ingredients
1 kg boneless pork shank
1 chopped onion
3 minced garlic cloves
1 cup of water
1 tablespoon vinegar
Salt and pepper to taste
1 french bread
grated mozzarella cheese
chopped tomato
chopped lettuce
Mayonnaise
Directions
- In a pressure cooker, place the shank, onion, garlic, water, vinegar, salt and pepper.
- Cover the pan and cook for about 1 hour over low heat.
- After 1 hour, remove the pressure from the pan and let the shank cool.
- Shred the shank into small pieces and set aside.
- Open the French bread and place the grated mozzarella cheese over the two halves of the bread.
- Place the bread in the oven until the cheese melts and the bread is crispy.
- Remove the bread from the oven and place the shredded shank over the bottom half of the bread.
- Add the chopped tomato, chopped lettuce and mayonnaise to taste over the shank.
- Close the sandwich with the other half of the bread and serve immediately.
